Hotels and independents are often treated as opposites: process against creativity. In my experience, each needs the other's strengths.
From hotels: a monthly P&L reviewed line by line; budgets set before the year starts; brand-standard audits that turn "good service" into checkable behaviours; written SOPs and training records; weekly KPI meetings.
From independents: speed of decision; a clear point of view on food, drink and music; owners on the floor; the ability to change a menu in a week, not a quarter.
The combination: keep the independent's identity, and add a light version of hotel controls. That means one weekly KPI sheet, costed recipes, a simple audit checklist and a monthly review. This is the core of how I work at FAN Hospitality Consulting.
