Cutting heads is the blunt way to lower labour cost. Matching hours to demand is the better one.
Schedule to forecast, not habit. Use covers by hour from the POS to build the rota. Most venues carry the same staffing on quiet and busy shifts.
Measure the right ratio. Track labour cost as a share of revenue weekly, and covers (or revenue) per labour hour by department.
Design the service sequence. Clear station roles, a defined service sequence and a simple pre-shift briefing cut wasted steps more than extra staff do.
Cross-train. Staff who can work two stations let you flex the team without overtime.
Train before you hire. Retention starts with onboarding. A structured first two weeks costs less than replacing a new hire who left.
